This Asian-inspired spam rice bowl is one of those recipes that‘s comforting, packed with flavour, and ready in under 30 minutes.
It’s the kind of meal you make once… and then keep coming back to again and again.
It’s also really easy to customise depending on what you have in the fridge, which makes it such a reliable go-to meal.

Single serving
Ingredients You’ll Need
Oil (sesame, sunflower, or olive)
Steamed white rice
1/2 can of Spam
A handful or two of fresh spinach
1 Egg
1 Sprig of green onions
For the sauce:
2 tbsp soy sauce
2 tbsp rice vinegar
2 tbsp sugar (or coconut sugar)
Step-by-Step Instructions
1. Cook Your Rice
Start with freshly steamed rice. Fluffy, warm rice is the base of the whole dish.
2. Make the Crispy Glazed Spam
Dice your spam into small cubes
Chop your green onion
On medium high heat a pan with a little oil
While spam is cooking mix your sauce ingredients in a small bowl
Fry until golden and crispy on the edges
Once crispy:
Add the middle to white end of green onion
Add sauce to spam
Stir and let it bubble for 1–2 minutes until slightly thickened and glossy
This creates a sweet, salty, tangy glaze that coats the spam beautifully
3. Cook the Spinach
Add spinach to a pan with a little oil on a medium low heat
Add a splash of soy sauce and a pinch of sugar, make sure it is all well incorporated
Use a splash of water if needed
Cover with a lid and cook for 2–3 minutes until wilted
Simple, but it adds so much balance to the bowl.
4. Make the Perfect Steamed-Fried Egg
Heat a pan over medium heat
Add a small splash of water
Crack the egg into the pan (like a fried egg)
Cover with a lid
Cook for:
3–4 minutes for a soft, slightly runny yolk
4–5 minutes if you prefer it a bit more set
The steam cooks the top while keeping the yolk silky — it’s perfect for mixing into the rice
Assemble Your Rice Bowl
Layer everything together:
A base of steamed rice
Steamed spinach
Crispy glazed spam
Your egg on top
Sprinkle with left over green onions
Optional: drizzle a little chilli oil or sesame oil if you like it extra savoury.
Tips
Use jasmine rice for extra fragrance
Swap spinach for pak choi or kale
Use coconut sugar if you are refined sugar free
Top with sesame seeds
